And necessary: here the traditional food of the city is traded and preserved, here the local Athenian becomes national. The colonial is naturalized Greek. The old trade, the shops, the cooks, less and perhaps weaker than in the past, but still here, with experienced wisdom and clear character, with intense density, with true targeting and imaginative specialization, compose an exciting gastronomic palimpsest. These shops are the reason for our inspiration on this issue”.
